Hatzidakis Santorini

Dry white, PDO Santorini

Grapes: 90% Assyrtiko, 5% Aidani & 5% Athiri

Vinification: Direct separation of must from the early harvested grapes. Clarification and fermentation with selected dry yeast at 18°C. Following fermentation, lees contact for 40 days. Aged in stainless steal tanks.

Tasting notes: Pale yellow color with pleasant citrus aromas. Full-bodied with firm acidity and long mineral aftertaste.

Food Pairings: Serve at 10-12oC, with seafood, pasta and white cheese. Can be aged up to 5+ years

2011 Hatzidakis Santorini


Hatzidakis Aidani-Assyrtiko (Organically grown grapes)

Dry White, PDO Santorini

Grapes: Assyrtiko, Aidani

Vinification: Vinification starts with Assyrtiko. Aidani is added about 10 days later. Direct separation of the must from the early picked grapes. Clarification and fermentation with selected dry yeast at 18°C. Following fermentation, lees contact for 40 days. Aged in stainless steal Tanks.

Tasting notes: Pale yellow color with soft golden hues. An elegant wine with bright, fruity nose and long mineral aftertaste.

Food Pairings: Serve at 10-12oC, with seafood, appetizers and salads.


Hatzidakis Nykteri

Dry White, PDO Santorini

Grape: Assyrtiko

Vinification: Very ripe grapes. Skin contact for 6 hours. After fermentation, aged for 6 months in oak barrels.

Tasting Notes: A very typical style of the traditional Nykteri wines of Santorini. Excellent structure. Full-bodied wine with rich, full palate and long aftertaste.

Food Pairing: Serve at 12-14˚C, with recipes of intense spicy flavors, rich fish dishes, white meats and even red meats in light red sauces.

 Can be aged for 6+ years


Hatzidakis Vinsanto

Sweet White, PDO Santorini

Grapes: Assyrtiko and Aidani

Vinification: Grapes are picked very ripe and are left in the sun to dry for 15 days. After fermentation, aged in oak ages for 6 years.

Tasting notes: Yellowish-brown with strong auburn shades.  Aromas of honey, sweet spice, raisins and coffee. Full velvety body with a unique balance between sweetness and acidity. Long finish.


Food Pairing: Serve at 8˚C, with chocolate desserts, crème brulée. Can be aged for 20+ years

About the Winery:
In 1996, Haridimos and Konstantina Hadzidakis returned to the family vineyard their parents had been forced to abandon long ago, after the earthquake of 1956. Together they transformed a traditional cave or “canava, carved in volcanic rock, into a small boutique winery that now produces some of the finest PDO Santorini wines on the island. Their vineyards surrounding the winery are some of the few actually certified organic on the island and are cultivated using the traditional basket shape vines grown directly on top of the volcanic soil. An innovative Enologist, since his first days of working at Boutari’s Santorini winery, Haridimos continues his work today with an unmatched passion and creative drive to make the perfect Santorini wine.
