Domaine Sigalas Santorini

Dry white, PDO Santorini

Grape: Assyrtiko

Vinification: Classic white wine vinification in stainless steel tanks under controlled temperatures. Can be aged 10+ years under proper storage conditions.

Tasting notes: Straw-blonde color with light shades of green. Subtle nose of citrus fruit. Excellent structure, full-bodied with rich mineral character and crisp acidity with a long aftertaste.

Food Pairings: Serve at 10-12oC, with fish, seafood and white meats with light sauces.

2011 Sigalas Santorini


Domaine Sigalas Santorini Barrel

Dry white, PDO Santorini

Grape: Assyrtiko

Vinification: Fermentation in French oak barrels. Aged 6 months  in barrel using, method "sur lies". Can be aged 10+ years under proper storage conditions.

Tasting notes: Bright gold-blond color, with discreet presence of wood and undertones of citrus. Rich, elegant and well balanced. Full-bodied with crisp acidity with a lengthy, mineral aftertaste.

Food Pairings: Serve at 12oC, with shellfish, fish and white meat with white piquant sauces, smoked cheese and smoked salmon.


Domaine Sigalas Assyrtiko-Athiri

Dry white, PDO Santorini

Grapes: Assyrtiko 75%, Athiri 25%

Vinification: Fermentation in stainless steel tanks under controlled temperature. Can be enjoyed for up to 3+ years under proper storage conditions.

Tasting notes: Bright straw-blonde color with nose of ripe citrus fruit. Refreshing acidity and a delightful finish. Can be enjoyed minimum 3 years.

Food Pairings: Serve at 10-12oC, with traditional Mediterranean cuisines.


Domaine Sigalas Vinsanto

Sweet white, PDO Santorini

Assyrtiko 75%, Aidani 25%

Vinification: Classic white wine vinification from grapes that are sun-dried for 10-12 days. Aged in old oak barrels for a minimum of 24 months. Unlimited aging potential when stored under proper conditions.

Tasting notes: Bright orange-golden color with rich, complex aromas of dried and sugared fruits. Exquisite structure, acidity and finesse, with a strong aftertaste.

Food Pairings: Serve at 8˚C, with strong cheeses and dried fruits or by itself after dinner.


Sigalas Mavrotragano

Dry red, Regional Wine of Cyclades,

Grape: Mavrotragano

Vinification: Classical red vinification, with prolonged extraction. Aged in new oak barrels for 18 months. Can be aged 7+ years under proper storage conditions.

Tasting notes: Deep red color with aromas of spice and red fruit. Flavors are complimented by rich and gentle tannins, balanced acidity and a complex finish.


Food Pairings: Serve at 18˚C, with various meat dishes and cheeses.

About the Winery:
Raised on Santorini, Paris Sigalas, first began making wine inside the traditional cave or “canava” located at the family home where he was born. Paris now runs a modern winery located in the same village of Baxedes, where visitors can come to taste his special wines and enjoy the famous Santorini sunset. A mathematician by trade, Sigalas has given all of his time and effort to realizing the extraordinary potential that the Assyrtiko of Santorini has to offer. Because of Paris’ deep affection for his native island, he has continued the island’s ancient winemaking traditions and has become a tireless advocate for the protection of the historic vineyard and the unique viticultural practices still used there.
